PEANUT BUTTER GRANOLA BARS

These peanut butter granola bars with dark chocolate are so delicious and easy to make. They are the perfect snack to grab on the go!
INGREDIENTS
Makes about 12 bars
- 2 cups (210 g.) rolled oats
- ¾ cup almonds (120 g.), chopped
- ¾ cup (200 g.) Peanut Butter Sea Salt
- ½ cup (160 g.) maple syrup
- 1 tsp vanilla extract
- 2 tbsp (15 g.) cacao powder
- 2 tbsp (15 g.) ground flax seeds
- 1 tsp ground cinnamon
- Pinch of sea salt
- ½ cup (75 g.) dark chocolate, chopped
INSTRUCTIONS
- Preheat the oven to 350°F (175°C). Spread the oats and chopped almonds on a baking sheet and toast for about 10 minutes. Let cool completely.
- In a small saucepan, gently heat the peanut butter, maple syrup, and vanilla extract over low heat. Stir until smooth, then remove from heat and let cool slightly.
- In a large bowl, combine the cooled oats and almonds with the cacao powder, ground flax seeds, cinnamon, and a pinch of sea salt. Pour the warm peanut butter mixture over the dry ingredients and stir with a spatula until everything is well coated.
- Line an 8×8 inch pan with parchment paper, leaving extra on the sides for easy removal. Press the granola mixture into the pan, using the back of a spoon to pack it down firmly and evenly.
- Melt the dark chocolate in a double boiler or in a heatproof bowl set over a pot of simmering water. Drizzle the melted chocolate over the bars.
- Refrigerate for at least 2 hours until the bars are firm. Use the parchment paper to lift them out of the pan, then cut into squares or rectangles.
Storage: Keep in an airtight container at room temperature or in the fridge.
