HALLOUMI BURGER WITH FRESH HERBS & SPICY CASHEW SAUCE

A fresh, herb-packed burger that’s perfect for summer. We love the contrast between the golden grilled halloumi, crunchy red cabbage, and the creamy sweet-and-salty cashew sauce.

Makes 4 servings

INGREDIENTS

For the cashew sauce

  • 2/3 cup Cashew Butter Sea Salt
  • 2/3 cup water
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 2 tsp chilli flakes, or less for a milder version
  • 2 tsp sesame oil

For the burgers

  • 1 block halloumi (200 g) , cut into 8 thin slices
  • 2 tbsp olive oil, for cooking
  • 1 cup shredded red cabbage
  • 4 buttered burger buns
  • Fresh cilantro, to taste (mint and basil work really well too!)

INSTRUCTIONS

  1. Add all the sauce ingredients to a Mason jar and blend with an immersion blender until smooth and creamy.
  2. Heat the olive oil in a skillet over medium heat. Cook the halloumi slices for about 2 minutes per side, or until nicely golden. Set aside.
  3. Toast the burger buns in a skillet, buttered side down.
  4. Assemble the burgers: spread the sauce on the buns, then add 2 slices of halloumi, some shredded red cabbage, and a generous handful of fresh cilantro.
  5. Serve immediately.

NOTES
This recipe makes more sauce than you’ll need for the burgers, but the leftovers are delicious in Asian-inspired stir-fries, grain bowls, salads, or served with roasted vegetables.
