COTTAGE CHEESE & PEANUT BUTTER PANCAKES
Share
With their light and fluffy texture, these pancakes are a little different from your classic pancakes. The combination of cottage cheese, eggs and Peanut Butter makes them naturally high in protein and perfect for breakfast.
We like to cook them in a small 6-inch cast-iron skillet: it gives them beautifully golden, slightly crisp edges while keeping them nice and thick. A regular skillet will work just as well, though.
The recipe makes seven generous pancakes that can be made ahead and kept in the fridge or freezer, then reheated in the oven for a few minutes on a weekday morning. You can also swap the peanut butter for your nut butter of choice.
To serve, add some fresh fruit, a drizzle of maple syrup and an extra spoonful of peanut butter!
Makes 7 pancakes
INGREDIENTS
For the pancakes
- 2 cups cottage cheese
- ¼ cup Peanut Butter Sea Salt
- 2 eggs
- ¼ cup soy milk
- 2 tsp baking powder
- 1 cup all-purpose flour
- Olive oil, for cooking
For serving
- Peanut butter
- Maple syrup
- Fresh fruit
INSTRUCTIONS
- Using an immersion blender, blend the cottage cheese and peanut butter until smooth.
- Transfer to a bowl and add the eggs and soy milk. Mix until well combined.
- Add the baking powder and all-purpose flour and mix until well incorporated.
- Heat a drizzle of olive oil in a 6-inch skillet over medium heat for about 1 minute, making sure the bottom is well coated. Pour ½ cup of batter into the skillet. Since the batter is quite thick and sticky, use a spatula to gently spread it so it covers the bottom of the skillet. If needed, use a second spatula to scrape off any batter sticking to the first.
- Cook for about 3 minutes, or until the top of the pancake begins to look set and the bottom is nicely golden. Carefully flip with a spatula and cook for about 3 minutes on the other side.
- Repeat with the remaining batter, adding a little oil before each pancake. Since the skillet will already be hot, you can reduce the heat at this point.
- Serve with peanut butter, a drizzle of maple syrup and fresh fruit if desired.
