PEANUT BUTTER GRANOLA BARS
These peanut butter granola bars with dark chocolate are so delicious and easy to make. They are the perfect snack to grab on the go!
INGREDIENTS
Makes about 12 bars
- 3/4 cup almonds (120 g.), chopped
- 3/4 cup (200 g.) Peanut Butter Sea Salt
- 1/2 cup (160 g.) maple syrup
- 1 tsp vanilla extract
- 2 tbsp (15 g.) cacao powder
- 2 tbsp (15 g.) ground flax seeds
- 1 tsp ground cinnamon
- Pinch of sea salt
- 1/2 cup (75 g.) dark chocolate, chopped
INSTRUCTIONS
- Preheat the oven to 350F. Place the oats and chopped almonds in a single layer on a baking sheet. Toast in the oven for 10 minutes. Set aside to cool completely.
- Place the peanut butter, maple syrup and vanilla in a saucepan and warm on low heat until smooth. Remove from the heat to cool slightly.
- In a large bowl, combine together the cooled oats and almonds, cacao powder, ground flax, cinnamon and salt. Pour the peanut butter mixture over the dry ingredients and mix well with a spatula until the oats are fully coated.
- Line an 8 x 8 inch pan with parchment paper, leaving some strips hanging on each side. Pour the granola mixture into the pan. Press the mixture down in an even layer, using the bottom of a spoon to push down as tightly as possible.
- In a double boiler or a stainless steel bowl placed over a pot of simmering water, melt the chocolate until smooth. Drizzle the chocolate on top of the bars. Chill in the fridge to set for 2 hours. Once set, pull the edges of the parchment paper to remove the bars from the pan. Cut into even squares or rectangles. Store bars in an airtight container at room temperature or in the refrigerator.
