ALMOND BUTTER PESTO PASTA

It’s creamy, it’s dreamy, and it’s ready to change the way you pesto! Mix our Almond Butter Pesto with your favourite pasta for and dinner is served.

INGREDIENTS

Almond Butter Pesto 
- 3 cups packed fresh basil
- 1/4 cup Almond Butter Sea Salt
- 1/4 cup nutritional yeast
- 1 clove garlic, finely chopped
- 2 tbsp lemon juice (approx. 1 lemon)
- 3/4 cup olive oil
- Pinch of salt

 Pasta
- 340 g of your favourite pasta
- Hot pepper flakes (optional)

 

INSTRUCTIONS

  1. Add all the ingredients of the pesto (except olive oil) in a food processor. Pulse and add olive oil in a thin stream until the mixture is creamy. 
  2. In a large pot of salted boiling water, cook the pasta until al dente. Set ½ cup of the cooking water aside.
  3. Transfer half of the pesto to a skillet, then add the drained pasta and toss to coat, cooking for about 1-2 minutes over medium heat. Adjust the amount of pesto to your taste—start with less and add more if you prefer a saucier pasta. Gradually mix in cooking water until the sauce reaches your desired consistency.
  4. Divide into bowls and garnish with hot pepper flakes, if using.
